1 large size cauliflower
1 teaspoon minced garlic
2 tablespoons butter
¼ cup low-fat cream cheese
½ teaspoon pink salt
2 teaspoons chopped fresh parsley
- Boil water in a large pan. Add cauliflower florets in the water and cook for 10 to 12 minutes. Drain the extra water.
- In a blender add the boiled cauliflower, minced garlic, butter, cream cheese, pink salt, and chopped parsley. Make a smooth and creamy mashed cauliflower.
- Garnish with chopped parsley.
